So, not satisfied with having filched the lara-bar recipe from Chocolate Covered Katie, I then spied one for choc-chip cookies, which I have been CRAVING. Also, I’ve been determined to up the protein of my homemade snacks, and this cookie recipe seemed like a worthy test subject.
They came out nicely! I should have used more sweetener/sugar to balance out the molasses, because they were a wee bit savoury (not for me, because I like less-sweet cookies, but I’m pretty sure that other people wouldn’t appreciate it. The soy protein, if not masked by sweetness, can be a bit…. meaty).
Choc Chip Cookies
1 cup gluten free flour (I used a mixture of soy and rice flour)
1/8 tsp salt
1/4 tsp baking soda
1/3 cup chocolate chips
1 tbsp pure protein powder (soy or whey)
2 Tbsp brown sugar (I used one of sugar and one of molasses)
1/2 tsp vanilla essence
1 tbsp coconut oil
2-3 tbsp milk
Mix all of the dry ingredients. Mix wet ingredients separately, and then add to the dry ingredients.
Bake at 190°C for 10 minutes.
